For others, sous vide cooking might be tough for home cooks.
First off, you need a resealable bag, then a vacuum sealer, and then a slow cooker – Not to mention, food packaging.
And, if you’re a millennial, ” a twenty-something-techie-individual”, that could be too much for you.
So, just hello fast food.
But now, a lot of food enthusiasts thought that the restaurant-grade meals served via sous vide cooking can be delivered to homes in an easier and stress free way.
Say hello to Mellow – “the kitchen robot”.
It’s been years that world famous chefs love using this sous vide technique.
Since it cooks food in resealable HDPE bags that are submerged in water bath, this cooking technique preserves the food’s natural juices and cooks them in equal temperature.
As a result: tender, juicy, and tasteful meals.
Most importantly, the results are reproducible.
Thinking about the goodness of this cooking technique, Catarina Violante and Ze Pinto Ferreira worked on Mellow with a vision of creating easy-to-manage sous vide machine for lazy home cooks.
This is a counter top kitchen tool that will be available to ordinary households soon.

Mellow is FNV Labs’ answer to futuristic robot cook that emphasizes low and slow cooking. Its first run back in August 2015 sold out fast. We don’t have the exact date yet but we’re getting words that the first batch of orders would be delivered about Spring this year. Preorders started in 2014 and the manufacturers claim that a lot of the units are being reserved quickly.
So what exactly does Mellow do?
Simply, it is a Sous Vide machine that is double walled, can contain 4.5 liters of water, programmable and get this… it has an app downloadable in both iOs and Android! Now that is interesting. So what does this model have that previous models don’t?
Sous Vide for Millennial
Sous Vide brings well textured meals. It requires users to prepare ingredients as required by recipe before tossing them in the cooker.
Does Sous Vide need expertise? Yes. Does it require kitchen involvement? Yes.
With everything today faster with a touch of the button, you can be sure that traditional sous vide preparation cannot attract much attention from millennials or young adults, or practically from anyone who is too busy already. But Mellow is able to be at par with modernity as it revolutionizes sous vide experience by introducing new features.
So, what makes Mellow the Sous Vide Machine?
Ferreira points out three things:
- it is effortless to use,
- it can store food in refrigerator-like temperatures, and
- it is smart, that is a counter top cooking device that connects to your Android or iOS devices.
This robot can be connected and be operated via an in app chef that can be downloaded to both iOs and Android. Given this wireless feature allows you to control this device and the cooking it does anywhere that has wi-fi.
And just like any other downloadable app, it gives notifications, too. It tells you when your food is ready to be cooked, when it is cooked, and if ever there have been interruptions to cooking. And because it is controllable wherever there is internet connection, it also allows you to change your cooking presets.
What is more innovative in this product is unlike other sous vide machines that can only keep warm food hours after it cooked, this can also keep them chilled before the preset cooking schedule.
It is somewhat a fridge and a cooker in one.
What happens is this, you can prepare raw ingredients and place them in the water filled tank. If you are not ready to cook yet, program Mellow to chill your food until the scheduled cooking. And it does not only chill them, it can also thaw frozen food so it is available by the time it is scheduled to cook.
What is more promising is this product can customize food according to user’s preferences. It asks you to rate the meals it produces and suggests cooking preparations for better results.
But with all this, Mellow does not consume too much power. It just uses 1000 watts and 50 watts respectively.
Mellow and Others
It promises you this: delicious meal at the end of the day and just 30 seconds for preset instructions.
Why such emphasis on less kitchen involvement? Because sous vide should no longer be exclusive to restaurants. Having Mellow in your kitchen as your smart sous vide machine assures you these things:
- It comes with self sealing food-safe bags which means you no longer have to buy vacuum sealing tools;
- You can cook up to 6 portions of food and it is still energy efficient;
- It only needs 30 seconds for setup using the app;
- It customizes food based on what you like since it asks you to rate your food every time and suggests cooking methods for better satisfaction; and,
- Its built in scale weighs the food and then arranges cooking settings on its own.

Other cooking machines also have some of these features: the remotely controlled, kept warm, and delicious reproducible results, but what could be more interesting about Mellow is that it can be really exciting for techie individuals currently getting involved into kitchen operations.
Aside from that, it operates over wi-fi so you don’t need to be within a certain range, or in some cases at most 20 feet from the device, for the remote control feature to work.
Simply, set up the time when you want the food to cook and it automatically stops cooking when food is done. It will not burn your food by keeping it warm for hours on end. It is guaranteed safe.
In the End
Launch retail price is gonna be
$599 ($399 pre-order) and most would probably think like, “whoa that is f-ckin’ too much”.
Yes, it is if you were going to look at it as of the moment. Considering that other sous vide machines are cheaper, what could be the thing(s) that will make you consider Mellow over the others when customer reviews tell us that all the others are ”exceptionally good?”
Remotely controlled (within 20 ft range), check.
Reproducible results, check.
Keep warm mechanism, check.
Cheap price, definitely!
Self-sealing bags, nope.
Chill food before cooking, nope.
Customisation of food preparation, nope

Anyway, if you still think that $599 is too much, well, maybe you should also consider what else is there right now that can actually compete with what Mellow offers.
Thinking that as new units are made available from different producers, they always come up with something that is better; if not, what could make people buy them?
But with Mellow, suggesting cooking techniques for better tasting food according to my choices – from a machine?
That’s something else! if that is not smart and innovative enough, what else could be?
